What Is It?
In Bulgaria, molasses is also known as rachil, madjun, or ady. It can be made from any fruit with high sugar content, such as grapes, pumpkin, plums, sugar beets, carob, dates, mulberries, and watermelon. Molasses is a thick fruit syrup made without added sugar!
The process involves extracting fruit juice, followed by prolonged boiling or pressing, until a consistency similar to runny honey is achieved.
How to Use It:
Molasses is a table product and a healthy alternative to sugar. It can be used as a natural sweetener for baking, tea, coffee, or simply spread on bread. Nutritionists recommend replacing refined sugar products with molasses. It is also often chosen as a substitute for honey in various dishes.
Store in tightly sealed glass jars.
Molasses is safe to consume without the risk of overdosing.
Health Benefits:
Date molasses provides all the benefits of dates, offering a natural sweetness derived from harmless glucose (about 75%) and fructose. These carbohydrates do not spike insulin levels and therefore do not cause hyperglycemia, unlike regular sweets. Its exceptional taste and nutritional value make it a great honey substitute.

About Dates:
Dates are one of the oldest fruits known to humanity, cultivated for over 4,000 years in North Africa and the Middle East. Dates are typically sold dried, as fresh ones are firm and less palatable. They are initially orange, turning dark brown after fermentation.
Dates are highly alkaline and contain beta-D-glucan, a unique soluble fiber. They help alleviate constipation, intestinal disorders, anemia, sexual dysfunction, diarrhea, stomach cancer, and high cholesterol, protecting against atherosclerosis.
They boost immunity, endurance, and brain function, increasing productivity by 20% during mental exertion.
Dates reduce side effects of antibiotics, help eliminate heavy metal ions from the body, and improve heart function, addressing issues like palpitations and weakness.
Rich in vitamins (almost all except E) and minerals, dates contain calcium, sulfur, iron, potassium, phosphorus, manganese, copper, and magnesium. Experts suggest eating one date daily to maintain a healthy, balanced diet.
