In Bulgaria, molasses is also known as rachil, madjun, or ady. It can be made from any fruit with high sugar content, such as grapes, pumpkin, plums, sugar beets, carob, dates, mulberries, and watermelon. Molasses is a thick fruit syrup made without added sugar!
The process involves extracting fruit juice, followed by prolonged boiling or pressing, until a consistency similar to runny honey is achieved.
